Cheddar Cheese Beer Tacos

You know it's going to be a good recipe when two of the main ingredients are beer and cheese!  It was oh so good, better on the second day than the first, believe it or not.  I cooked the chicken all day, but it was so much better after I let it sit in the fridge overnight and made another meal out of the recipe last night.  It makes a ton, so you'll have a lot of left overs!

I could eat avocado all day every day, it's one of my favorite foods.  It gives these tacos great flavor as well. 

I found the recipe from one of my favorite food blogs, How Sweet It Is, her recipes are all delicious and beautiful(I haven't yet mastered her beautiful food photography).  I used frozen chicken and it cooked perfectly!


I have discovered ginger beer, I know I am way late on this trend train, but it's so yummy!  I made this cranberry moscow mule with it the other night and it was perfect with my tacos.  I made this ginger beer margarita last night(hmmm....hello, so good!) with our tacos and it was equally delicious.
