No Bake Energy Balls

I love to cook, it's one of my favorite things to do.  Give me a glass of wine, a great station on Pandora, and a good recipe and I'm in heaven.  Tell me to bake and I'd rather run a marathon.  So when I saw "No Bake" at the beginning of this recipe I knew we would become good friends, and I was right, it's a new favorite.  I used THIS RECIPE as my base, but tweaked it a bit; because I didn't have all the ingredients.


- 1 cup of old fashioned oats

-1/2 cup of peanut butter(I used good ole JIF)

- 1/3 cup of coconut flour(yep, flour, I didn't have flakes so I used coconut flour and found it to be just as good)

- 1/3 cup of honey

- 1 tablespoon of chia seeds

- 1/2 cup of chocolate chips(I am not a big fan of chocolate chips so I used about 1/3 a cup)

Combine all the ingredients together in a bowl and mix.  I used my hands after the wooden spoon was not working too well.  Once the ingredients are combined in a bowl cover and chill in the fridge for 30 min.  After the ingredients have chilled you can roll the mixture into balls and either eat immediately(like I did) or seal them in a container and store in the fridge.
