This recipe has been one of my favorites for years. It takes 20 minutes, and that's being generous! I found the recipe when R and I started dating, so almost 6 years ago and have been making it since. A rotisserie chicken is my best friend when I am in a hurry, if you're near a Wholefoods go and pick one up there, they are only $6.99 and free of nasty antibiotics!
- 16 oz package of bow tie pasta
- 1 rotisserie chicken
- 1/2 cup of frozen snow peas
Ingredients for Sauce
- 1/2 cup of olive oil
- 1/3 cup of low sodium soy sauce
- 1/3 cup of rice wine vinegar
- 1 tsp of toasted sesame oil
-3 tbs of brown sugar
-1/2 tsp of fresh ginger
To make the process quicker, buy a rotisserie chicken and pull the meat off and shred with two forks, set aside. Bring a pot of water to boil and add the package of pasta, cook according to the directions on the package. While the pasta is boiling mix all the sauce ingredients together in a small bowl and set aside. Once the pasta is al dente, drain and pour the pasta back into the pot. Add the shredded chicken and frozen snow peas(the heat of the noodles will thaw the peas) toss the chicken and snow peas together with the pasta. Then pour the sauce and toss in the pot. Top with a few sesame seeds and serve!
*You can serve it immediately or allow to chill in the fridge, it's delicious either way!
*You can get creative with this recipe and add carrots, edamame, water chestnuts, almond slivers, etc.
